Instructions For Preparing The Mutton Kali Mirch Recipe :

Marinating the Mutton:

In a large mixing bowl, combine the mutton pieces with whisked yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, half of the coarsely ground black peppercorns, and salt to taste.
Mix everything thoroughly, ensuring that all the mutton pieces are well coated with the marinade.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, to allow the flavours to meld together.

Cooking the Mutton:

Heat vegetable oil or ghee in a heavy-bottomed pan or pressure cooker over medium heat.
Add the onions sliced and fry until they turn golden brown, row smell goes away and caramelized.
Now, add the marinated mutton with the marinade to the pan.
Cook the mutton on medium-high heat for about 10-12 minutes, stirring occasionally, until it starts to brown.
Reduce the heat to low, cover the pan, and let the mutton simmer for about 45 minutes to 1 hour, or until it is tender and cooked through. If using a pressure cooker, cook for about 9-10 whistles.
Once the mutton is cooked, uncover the pan and increase the heat to medium-high.
Stir in the remaining coarsely ground black peppercorns and slit green chilies. Cook for another 5-7 minutes to allow the flavours to blend well.

Finishing Touches:

Sprinkle some garam masala powder on the cooked mutton and give it a final stir.
Check the seasoning and adjust salt and spices if required.
Garnish the Kali Mirch Mutton with freshly chopped coriander leaves.
Serve hot with naan, roti, or steamed rice, along with lemon wedges on the side for an extra burst of tanginess.
