Instructions For Authentic Chicken Kacchi Biryani Recipe:

Marinating Chicken:

In a large mixing bowl, combine chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, biryani masala, salt, chopped coriander leaves, chopped mint leaves, lemon juice, slit green chilies, and fried onions (barista).
Mix well to coat the chicken pieces evenly in the marination.
Cover the bowl and let the chicken marinate for at least 2 hours, preferably overnight in the refrigerator, to allow the flavours to penetrate.

Preparing Rice:

In a big pot, add water to a boil.
Add soaked and drained basmati rice into the boiling water.
Add bay leaf, green cardamom pods, cloves, cinnamon stick, and salt to the rice.
Cook the rice until it is 40-50% cooked. The grains should be firm but almost cooked through.
Once cooked, drain all the rice and set aside.

Layering the Biryani:

Preheat the oven to 180°C (350°F).
Take a heavy-bottomed, oven-safe pot or biryani handi. Grease the bottom and sides with ghee or melted butter.
Spread a layer of marinated chicken at the bottom of the pot.
Top the chicken with a layer of partially cooked rice.
Drizzle saffron-infused milk over the rice for a vibrant colour and aroma.
Sprinkle fried onions (barista), chopped coriander leaves, and chopped mint leaves over the rice.
Repeat the layering process with the remaining chicken and rice, ending with a layer of rice on top.
Drizzle any remaining saffron-infused milk and ghee or melted butter over the final layer of rice.
Cover the pot tightly with a lid or aluminum foil, cotton cloth to seal in the steam.

Dum Cooking (Slow Cooking):

Place the sealed pot in the preheated oven and let it cook for 45-50 minutes.

Alternatively, you can place the pot on a tawa (griddle) over low heat and let it cook for 45-50 minutes. This method simulates the traditional dum cooking technique.
Once done, remove the pot from the oven or tawa and let it rest for 10-15 minutes.

Final Assembly and Garnish:

Carefully remove the lid or foil from the pot.

Gently fluff the biryani with a fork to mix the layers.

Garnish the biryani with fried onions (barista), fried cashews and raisins, chopped coriander leaves, and chopped mint leaves.

Serve hot with raita (yogurt dip), salad, and your favourite condiments.
