Introduction of  Navratan  Korma :

Ingredients of Navratan Korma :

  • 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower, beans, etc.), diced
  • 1 large onion, finely chopped
  • 1 cup paneer (Indian cottage cheese), diced
  • 1/2 cup cashew nuts, soaked in water
  • 1/2 cup almonds, blanched and peeled
  • 1/3 cup desiccated coconut
  • 1/4 cup raisins
  • 1/2 cup green beans, chopped
  • 1/4 cup carrots, diced
  • 1/3 cup green peas
  • 1/2 cup bell peppers, diced
  • 1/4 cup pineapple chunks
  • 1/4 cup fresh cream
  • 1/2 cup curd, whisked
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 tablespoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon saffron strands (optional)
  • 3 tablespoons ghee (clarified butter) or cooking oil
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions of Preparing Navaratan Korma :

Preparation of Cashew-Almond Paste:

In a blender, combine the soaked cashew nuts, blanched almonds, and desiccated coconut.
Blend the ingredients into a smooth paste, adding a splash of water if needed. This rich and creamy paste will form the base of the Navratan Korma gravy, imparting a luxurious texture and nutty flavour.

Cooking the Vegetables:

Heat ghee or vegetable oil in a pan over medium heat. Once the oil is hot, add the diced mixed vegetables and paneer cubes. Sauté the vegetables and paneer until they are lightly browned and partially cooked.  This step enhances the flavors and textures of the vegetables, adding depth to the Korma.

Making the Korma Base:

In the same pan, add cumin seeds and allow them to splutter.  Add finely chopped onions and sauté until they turn golden brown and translucent.
Now add ginger-garlic paste to the pan and sauté for a few minutes until the raw aroma disappears.
Add chopped tomatoes to the pan and cook till they turn soft and mushy, stirring occasionally.

Creating the Korma Sauce:

Lower the heat and add the prepared cashew-almond paste to the pan. Mix well to combine with the onions and tomatoes.
Cook the mixture for a few minutes until the oil starts to separate from the sides, indicating that the paste is well cooked and aromatic.

Adding Spices and Yogurt:

Now add coriander powder, turmeric powder, red chili powder, and garam masala powder into the pan. Stir well to combine the spices with the Korma base.
Gradually add whisked curd to the pan, stirring continuously to prevent curdling. The yogurt adds a tangy flavor and creamy texture to the Korma.

Incorporating the Fruits and Nuts:

Add the chopped green beans, carrots, green peas, bell peppers, pineapple chunks, and raisins to the pan. Stir gently to combine with the Korma sauce.
Let the Korma simmer gently for a few minutes, allowing the flavors to meld together and the vegetables to cook through.

Finishing Touches:

Pour fresh cream into the pan and mix well to incorporate, adding richness and creaminess to the Navratan Korma.
If using saffron strands, dissolve them in a tablespoon of warm milk and add to the Korma for a subtle floral aroma and golden hue.
Adjust the seasoning with salt according to taste preferences.

Garnishing and Serving:
