Ingredients of Chicken Mumtaj Recipe :
- Cooking Oil: 1/4 Cup
- Sliced Onion: 3 Medium Sized
- Sliced Tomtoes: 2 Medium Sized
- Green Chilies: 3-4
- Star Anise – 1
- Green cardamom – 5 to 6
- Black pepper – 1/2 tsp
- Chicken: 1 Kg
- Ginger garlic paste: 2 Tbsp
- Turmeric Powder: 1 Tsp
- Coriander Seeds Powder: 2 Tsp
- Roasted Cumin Seeds Powder: 1 Tsp
- Black Pepper Powder: 1/4 Tsp
- Salt: 1 Tsp
- Water: 3 Tsp
- Whisked Yogurt: 1 Cup
- Fresh Cream: 1/4 Cup
- Garam Masala Powder: 1/2 Tsp
- Cooking Oil: 1/4 Cup
- Green Chilies: 5-6
- Chopped Coriander Leaves
Instructions for Preparation :
- Take a kadhai, pour 1/4th cup of oil in it and let them heat . After heating the oil add chopped onion, add chopped tomotoes and slited green chillies.
- Cook all of them on high flame and stir continously on 4-5 min . Now take all of them out of the vessel and keep them aside to let it cool it down.
- Now in a same oil add 1 star anies, 5-6 green cardamom, 1/2 teaspoon black pepper in it.
- Now add 1kg Chicken in it now turn the flame on high and fry the chicken till chicken fey well as white coating on it. Now add 2 tablespoon ginger-garlic paste and fry it well.
- When chicken is good fry add half teaspoon turmeric powder, 2 tablespoon corriender powder, 1 tablespoon dry rosted and corrsed cumin powder, 1/2 teaspoon black peeper powder and salt to taste.
- Now mix all together and cook properly on high flame. In middle add 4-5 tablespoon water in it beacuse it prevent to sticking the chicken on bottom. Fry it well.
- Now the onion, tomato and green chilli are cooled and blend it.
- After blending add on chicken mix well.
- Now on low flame add fully whisked curd make sure not a sour curd.
- Mix with chicken very well on low flame.
- Cook the chicken around 30-35min. After that when chicken is soft add 1/2 cup of fresh cream for a very rich and creamy texture.
- Add 1/4 th teaspoon garam masala, 1 tablespoon crushed kasthuri menthi. Again add all the thing together on medium flamearound 5 min.
- Now are finally chicken mumtaj is ready for plating.
- Serve hot with naan, roti, or fragrant basmati rice.
