500g fish (rohu, katala, or any freshwater fish)
3-4 green chilies, slit lengthwise
4-5 garlic cloves, minced
1-inch ginger, grated
2 tomatoes, finely chopped
4-5 tbsp mustard oil
1 tsp fenugreek seeds
2 tsp turmeric powder
1 tsp red chili powder
Salt to taste
Fresh coriander leaves for garnish
For Mustard Paste:
1 tbsp mustard seeds1 small-size onion
1-inch ginger, chopped
4-5 garlic cloves
2-3 green chilies
1 tsp turmeric powder
Water (as required)
Instructions for Preparing Bihari Fish Curry With Mustard Paste :
Prepare the Mustard Paste:
Take a blender jar add musturd seed.
Add chopped ginger, garlic cloves, green chilies, turmeric powder, and a little water.
Blend the ingredients into a smooth paste. Set aside.
Clean and Marinate the Fish:
Rinse the fish pieces under cold water and pat them dry with a paper towel.
In a bowl, mix turmeric powder, red chili powder, and salt.
Rub this spice mixture evenly onto the fish pieces. Now need to wait.
Heat Mustard Oil:
In a deep-bottomed pan or kadhai, heat mustard oil over medium heat until it reaches its smoking point.
Once heated, lower the flame and let the oil cool down slightly.
Fry the Fish:

Now add chopped tomatoes and slit green chilies. Cooks until the tomatoes turn mushy.

Once the onion-tomato mixture is cooked, add the prepared mustard paste to the pan.
Mix well together and cook for a few minutes until the oil get start seprated from spices.
Add a little water if the paste is too thick to achieve the desired consistency.
Simmer the Curry:
Once the mustard paste is cooked, add water to adjust the consistency of the curry.
Season with salt according to taste.
Bring the curry to a gentle simmer and let it cook for 5-7 minutes to allow the flavors to meld together.
Add Fried Fish:
Carefully slide the fried fish pieces into the simmering curry.
Spoon the curry over the fish to ensure even coating.
Cover the pan and let the fish simmer in the curry for another 5-7 minutes, to allowing it to absorbs the flavours.
Garnish and Serve:
When the fish is cooked and curry reaches the desired consistency, turn off the heat.
Garnish the Bihari fish curry with freshly chopped coriander leaves.
