2 tbsp mustard oil
1 tsp cumin seeds
1/2 tbsp turmeric powder
1 tbsp red chili powder
12tsp coriander powder
1 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

For the Spice Blend:

2 tbsp coriander seeds
1 tbsp cumin seeds
1-inch cinnamon stick
3-4 cloves
3-4 black peppercorns
2-3 green cardamom pods
1 dried bay leaf

Instructions for Preparing the Authentic  Bihari Aloo Dum Recipe :

Prepare the Spice Blend:

In a dry skillet or pan, roast coriander seeds, cumin seeds, cinnamon stick, cloves, black peppercorns, green cardamom pods, and dried bay leaf over medium heat.
Roast the spices until they become fragrant and slightly browned. Stirring constantly to prevent burning.
Once roasted, remove the spices from the heat and let them cool.
Transfer the cooled spices to a spice grinder or mortar and pestle, and grind them into a fine powder. Set aside.

Parboil the Potatoes:

Peel the potatoes and halve them lengthwise.
Rinse the potato halves under cold water to remove any excess starch.
In a large pot, bring water to a boil and add the potato halves.
Parboil the potatoes for about 5-7 minutes until they are partially cooked but still firm.
Once parboiled, drain the potatoes and set them aside.

Heat Mustard Oil:

In a deep-bottomed pan or kadhai, heat mustard oil over medium heat until it reaches its smoking point.
Once heated, lower the flame and let the oil cool down slightly.

Fry the Potatoes:

Carefully add the parboiled potato halves to the hot oil.
Fry the potatoes until they turn golden brown and crispy on all sides.
Once fried, remove the potatoes from the pan and set them aside on a plate lined with paper towels to absorb excess oil.

Prepare the Curry Base:

In the same pan, add more mustard oil if required.
Add cumin seeds to the hot oil and let them crackle.
Add finely chopped onions and sauté til they turn translucent.
Stir in minced garlic, grated ginger, and slit green chilies. Cook until the raw aroma goes aways.

Add Tomatoes and Spices:

Add finely chopped tomatoes to the pan and cook til they turn soft and mushy.
Once the tomatoes are cooked, add the ground spice blend (prepared in step 1) to the pan.
Add turmeric powder, red chili powder, coriander powder, and salt to taste. Mix well to combine all the spices.

Simmer the Curry:

Lower the heat and let the spices cook for a couple of minutes, allowing the flavors to meld together.
Add a splash of water if the mixture becomes too dry, ensuring it doesn’t stick to the bottom of the pan.
Once the spices are well incorporated, add water to the pan to create the desired consistency of the gravy. Bring the curry to a gentle simmer and let it cook for a few minutes.
