INTRODUCTION OF ASLAM BUTTER CHICKEN :

Aslam Butter Chicken was invented in Pakistan . After Partation the native of punjab province of Pakistan came to Delhi. They come with beautiful  recipe called Aslam butter chicken. In the actual dish Aslam Chicken grills the marinated chicken pieces on a charcoal grill and then the main key ingredients other than the chicken is loads of Butter, fresh cream and curd. The spices that are used in the dish are a top secret.

INGREDIENTS OF ASLAM BUTTER CHICKEN :

  • 150 gram butter
  • 4 Chicken legs on the bones
  • 1 tablespoon coriender seeds
  • 1/2 teaspoon cumin seeds
  • 3-4 green cardamom
  • 1 black cardamom
  • 6-8 cloves
  • 1 mace blade
  • 1 inch Cinnamon Stick
  • 4 Dried Red Chillies
  • 8-10 Garlic Cloves
  • 1 inch Ginger
  • 1/2 cup yogurt
  • 1 teaspoon dry fenugreek leaves
  • Salt to taste
  • crushed black pepper
  • 1/2 lemon
  • Ghee for Drizzling
  • 2tablespoon of oil
  • 1/2 teaspoon of yellow chilli powder
  • 1/4 cup fresh cream
  • Yogurt – green chilli chutney as required

INSTRUCTION FOR PREPARING THE ASLAM BUTTER CHICKEN :

1.)First ,let’s prepare the marination for which we will make a spice.
Take a pan and turn on the gas at a low flame. We will add some Corriender seeds to it. Along with it, let’s add cumin seeds,3-4 green cardamoms, a black cardamom, some cloves, a mace as it adds a very nice flavour, and we will also add Cinnamon. And we have to roast it nicely at a low flame till the spices are nice and fragranted .It will have a nice aroma.

2.)The spices are getting roasted well. Now ,we will add red chillies to it, atleast 4 dried red chillies. As soon as the spices get slightly roasted , they release their flavour and aroma. Now, we will be able to intercept that the spices are heating on a low falme and they are releasing their flavour and it gives out a beautiful aroma too. At that point ,they are done.


3.) We do not have to over roast it. Now let’s transfer it to a mixer jar. So, we will add the spices into the mixer jar. We are going to add ginger and garlic to it ,So we have to prepare a marination paste. We have to added 8-10 garlic cloves to it, and roughly chopped ginger ,and also some yogurt.
So, everything will be blend together and marination will be ready. We will take fenugreek leaves, which have slightly roasted and keep there and keep aside.

4.)And, let’s come to the chicken. We will using Chicken Chicken leg here, basically whenever you making tikka or tandoori chicken. I prefer using the leg part because it is high in fats and when you’re cooking it, even if gets over cooked , it tends to remain nice and juicy. Since it has lots of fat in it. So,I prefer using this cut for tikka and tandoori. So, here we have Chicken legs. We have cut the chicken into small pieces here. Now , if you talk about ASLAM CHICKEN , So we had witnessed that they first marinate the chicken well.

5.)Now, we will add chicken into big vessel here. So, lets marinate
the chicken now. First, we’ll add salt to taste along with it, some crushed black peppercorns, if you want, you can add add into the masala and grind it together. And along with it, let’s add garam masala.
Now ,let’s add lemon juice. Now, let’s mix it well. Now let’s add the prepared marination with yogurt and the spices. We added the marination , So now let’s mix it well. After mixing it well ,we have to let it marinate for around 3-4 hours. So, the Marination is done here. We have to let it marinate for 3-4 hours So that the masala are penetrated well in the chicken and the flavour and aroma are infused in the chicken. After 3-4 hours, we have the marinated chicken here, So I will smoke it now.

6.)Why am I going to smoke it?
Beacause , Aslam Butter Chicken is prepared on a brezier and is roasted on a coal. To get that same flavour, we will smoke it and give that smoky flavour to it. So, I have to take hot cool here, place it in the centre.
In this smoking coal, we’ll added 2-3 cloves and ghee instantly And as soon as the smoke starts to appear, we are going to trap it. We will cover it with aluminium foil. So that the smoke is trapped well inside, and the chicken gets a nice smoky flavour. So, let it smoke here and let’s move towards the process of cooking.

7.)We need a grill pan here. So take a gill pan and heat it well. Beacause we do not usually have a brezier or barbique at home. So you can easily cook this on a grill pan. And if you have an oven, you
can cook it at 200 centerigrate for around 8-10min. It will get nicely cooked and charred and it will give you the same effect like that of a tandoori or barbeque chicken would be.

8.) Lets add oil and butter to the grill pan. And the coal till then might have done its job. So, lets open it. Lets mix the chicken well ones more. The pan is hot. Now lets add the marinated chicken to it. You have to hear the sizzling sound ,the pan should be this hot.


9.)While the chicken is getting cooked, we will get a nice colour on one side, then we will flip it and cook it. Well till the chicken gets cooked well. It has to be nice and juicy from inside, and as soon as we take it out. We will add a spice mix to it . so , lets prepare the spice mix now.

10.) For this, We will add chaat masala in a bowl, some black salt and yellow chilli powder which adds a smoky flavours.
The spice mix is also ready.

11.)Now lets come to the butter , we havent added it yet.
Now, we will add the butter into a kettle. So that we can heat and melt it easily. You might be uneasy to take a cup of butter. But , here we are making it the authentic way. If you want , you can add less or more, it all depends on you. Now, lets melt it on a low flame here.

12.)Now, the butter has started to melt. We have to melt it on a low flame. Now, our chicken is also ready so we will take it out in a steel bowl. That is called Tasla.

13.) The chicken is well cooked so lets take it out here. And we will toss it in butter and spices quickly. The butter is also melted here. So we will turn off the flame.
You dont have to over heat the butter as it tends to burn. So, we have to just melt it. This is ready.

14.) The chicken is ready so we will add the prepared spice mix quickly. Add some fresh cream , some mint chuntey which is prepared with yougart, very little. Add we have to toss it.

15.) This is done, Now we come to the main step of adding butter. So, lots and lots of butter going in. We have to toss it well.
Aslam Butter Chicken is ready.

Serving:

You can serve it with roomali roti, or naan and onion and lemen.
