Ingredients of Aloo Parwal Stew Recipe :
4 medium-sized potatoes, peeled and cubed
8-10 pointed gourds (parwal), peeled and chopped into chunks
2 medium-sized onions, finely chopped
3-4 cloves of garlic, minced
1-inch piece of ginger, grated
2 green chilies, slit lengthwise
1 teaspoon cumin seeds
1/2 tablespoon turmeric powder
1 teaspoon red chili powder
1 tablespoon coriander powder
1/2 teaspoon garam masala powder
Salt to taste
2 tablespoons vegetable oil
Fresh coriander leaves for garnish

Instructions for Preparation of Aloo Parwal Stew Recipe :
Prepare the Ingredients:
Peel and cube the potatoes.
Peel the pointed gourds and chop them into chunks.
Finely chop the onions .
Mince the garlic- garlic paste.
Slit the green chilies lengthwise.
Heat Oil and Add Cumin seeds.
In-Stove-Preparation :
Heat vegetable oil in pressure cooker on medium heat.
Add cumin seeds to the hot oil and let them splutter, releasing their aroma.
Sauté Aromatics:
Add poined gourd in it and fry then around 10-15 min sepretely.
Now add cubed potatoes , finely chopped onions in it.
Add onion- garlic paste.
Also add all the spices like salt, termeric powder,red chilli powder, corriander powder
in it and mix them all thother .
And cook around 10-15 min all together on medium heat.
Cook the Stew :
Pour in enough water to cover the vegetables.
If using a pressure cooker, close the lid and cook for 2-3 whistles or until the vegetables are tender.
If using a pan, cover and cook over medium-low heat until the vegetables are soft and cooked through, stirring occasionally.
Adjust Consistency and Seasoning :
