Instructions For Authentic Galouti Kebab Recipe :
Marination :
In a large mixing bowl, add the finely minced meat, chopped onions, green chilies, ginger-garlic paste, raw papaya paste, roasted chickpea flour, clarified butter (ghee), fresh coriander leaves, fresh mint leaves, garam masala powder, red chili powder, turmeric powder, nutmeg powder, mace powder, and salt.
Mix all the ingredients thoroughly, ensuring that the spices are evenly distributed and coat the meat mixture. Allow the mixture to marinate for at least 2 hours, preferably overnight, in the refrigerator. Marination helps in infusing the flavours into the meat and tenderizing it for a melt-in-the-mouth texture.
Shaping the Kebabs :
After marination, take out the meat mixture from the refrigerator and let it come to room temperature.
Divide the mixture into equal-sized portions and shape them into small round patties or kebabs. You can grease your palms with a little oil or water to prevent the mixture from sticking.
Press each kebab gently to flatten it slightly. Ensure that the kebabs are of uniform size for even cooking.
Cooking the Kebabs :
Heat a big and thick tawa and grease it with ghee or oil.
Once the pan is hot, place the shaped kebabs on it, leaving some space between each kebab to prevent overcrowding.
Cook the kebabs for about 7-8 minutes on each side or until they are golden brown and cooked through. Brush some ghee or oil on the top surface while cooking to enhance the flavor and ensure moistness.
Once cooked, remove the kebabs from the tawa and place them on a plate lined with kitchen paper towels to absorb any excess oil.
Serving :
Arrange the hot Galouti Kebabs on a serving platter and garnish them with finely chopped coriander leaves and mint leaves.
Serve the Galouti Kebabs hot, accompanied by mint chutney, onion rings, and lemon wedges. These kebabs pair well with roomali roti, naan, or sheermal, adding to the indulgence of this royal delicacy.
